Soak 12 oz rice noodles in water while making recipe.
Chop 4 scallions, slice 1-2 limes into quarters. Crush 1/2 cup peanuts. Wash 1 cup bean sprouts.
Make sauce:
1/4 cup Vietnamese fish sauce (Red Boat or 3 Crabs are the best)
1/2 cup rice vinegar
2 Tbs tamarind sauce
1/2 cup sugar
Cut 1 pkg firm tofu into squares and marinate in the sauce.
Cut up vegetables: red pepper, onion, mushrooms.
Beat 2 raw eggs.
Add oil to pan and stir fry the vegetables. Add tofu and sauce. Add the 2 beaten eggs.
Stir, add soaked noodles. When hot, add sliced scallions, chopped peanuts and bean sprouts.
Serve with lime juice.
