Chocolate gelatin cups

Make your own jello for a very gut friendly snack! This version is especially good for kids due to the high fat content. Need 4 small jars or glass containers (4 oz size).

8 oz water

2 Tablespoons cocoa powder

2 scoops coconut milk from a can

2 Tablespoons sweetener (maple syrup or honey, or allulose if preferring to go low carb)

a dash of cinnamon (always use Ceylon cinnamon, never use Cassia)

1 Tablespoon gelatin

Instructions

In a medium bowl, add 1/4 of the coconut milk mixture and then sprinkle the gelatin on top. Let it sit for 2 to 3 minutes. Do not mix.

In a small pot over medium-low heat, add the remaining coconut milk and honey. Whisk to combine. Allow it to heat through for 2 to 3 minutes or until warm. Do not let it boil. Stir in the cocoa powder.

Add the warm coconut milk mixture to the gelatin mix and use a whisk to mix as you pour.

Place a sieve over the top of your jars and pour the mixture into the jars through the sieve. This will ensure there are no clumps of gelatin remaining. If you don’t do this its ok, it just might be a little clumpy.

Store the small glass jars in the fridge for two hours to set.
