From the Costco magazine
1/3 cup red onion, finely chopped
2 oranges, peeled, seeded and diced into small pieces
1 avocado, pitted, peeled, sliced, diced
3 Tablespoons cilantro, chopped
1 Tablespoon garlic, minced (optional)
Juice of 1 lemon
salt and pepper, to taste
Mix onion, avocado, oranges, cilantro in large bowl. Add garlic and lemon juice and mix well. Add salt & pepper to taste.
Enjoy with chips, tacos, burritos, fish, anything!
